A taste of summer

I know it's not summer yet, but I'm ready for it anyway.

These yummy cookies have me dreaming of a wicked combo of grilled peaches (on the bbq) and vanilla bean ice cream....white chocolate chip-oatmeal cookies piping hot out of the oven- now that's something I can get behind!

I recently went through our bookshelves and came across Southern Living's Best Loved Cookies among my cookbooks. And seeing that both my husband and my father-in-law are self-proclaimed cookie monsters I have decided to work my way through all (that might be a bit ambitious) 50 recipes!

I've been popping the dough in the freezer and making them in small batches (so as not to ruin my new stomach flu figure- finally back to my pre-pregnancy weight, 3 years later!)  I've always said that I'm just one stomach flu away from my goal weight ;)

Next time you're over for a visit you might ask me what recipe I'm on...Mississippi Mud Cookies are up next (think chocolate, pecans, and marshmallows.) I'd be happy to share!

Please summer, come quickly...or at least give us a really warm Spring, I think we deserve it!

p.s. a few weeks ago I tried the Chunky Chocolate Gobs and fell in love...they're rich (so you could possibly skip the oreo cookies) but worth it...the coconut chunks really push it over the edge.

p.p.s. if you're planning on freezing the dough I recommend making them into balls first and then adding a couple of minutes to the cooking time.  I actually think freezing them first helps to make the final product a lot more moist.

Loved those gobs! I must admit to being a raging cookie monster as well, so let me know when you need any more testers.
